Simple to make, full of flavor, and ideal for a quick energy boost anytime. Ingredients: 1 cup pitted dates ½ cup walnuts (or almonds) 1 cup rolled oats 2 Tbsp cocoa powder Pinch of salt Directions: In a food processor, blend dates and nuts until crumbly. Add oats, cocoa powder, and salt. Pulse until mixture sticks together. Roll into small balls (about 1 Tbsp each). Refrigerate for 30 minutes to firm up. Store in an airtight container for up to a week.

Rustic Dutch Apple Pie Ingredients: For the Crust 1 premade pie crust or your favorite homemade 9-inch pie dough For the Filling 6–7 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and sliced ½ cup sugar (use brown sugar if you like deeper caramel notes) 2 tbsp all-purpose flour (or arrowroot for gluten-free option) 1 tsp cinnamon ¼ tsp nutmeg 1 tbsp lemon juice Pinch of salt For the Crumble Topping 1 cup rolled oats ½ cup sliced almonds (or chopped walnuts/pecans) ½ cup brown sugar ½ cup all-purpose flour ½ tsp cinnamon ½ cup unsalted butter or coconut oil, melted A Cozy Twist on a Classic This pie is the sweet spot between tradition and improvisation—crispy crust, tender apples, and a golden oat-almond topping that’s just the right mix of rustic and refined. Whether you use a store-bought crust for speed or roll out your own, the magic is in the crumble. Directions: Prep the crust: Roll out the premade or homemade dough and fit it into a 9-inch pie dish. Crimp the edges for that rustic look. Preheat oven to 375°F (190°C). Make the filling: In a large bowl, toss the sliced apples with sugar, flour, cinnamon, nutmeg, lemon juice, and salt until coated. Pour into the prepared crust. Mix the crumble: Combine oats, almonds, brown sugar, flour, and cinnamon in a bowl. Stir in melted butter until the mixture is evenly moistened and crumbly. Assemble: Spread the crumble evenly over the apples, pressing lightly so it sticks. Bake: Bake for 50–60 minutes, until the topping is golden brown and the filling is bubbling at the edges. If the topping browns too quickly, cover loosely with foil. Cool and serve: Let the pie cool at least 30 minutes before slicing. Serve warm with vanilla ice cream, or at room temp with coffee/tea.

Veggie Korean Inspired Stir-fry Noodles (Japache) Ingredients: 2 packages of glass noodles 1 package of extra-firm tofu, pressed and dried 4 oz carrot sticks 3 Tbsp olive oil + sesame oil 2:1 1 large white onion, julienne 6 green onions, chopped 3 Tbsp minced garlic 12 oz sliced mushrooms Large handful of spinach, stems removed 1 crown of broccoli, prepared into florets, steamed on side Sauce: 1 C soy sauce or tamari 6 Tbsp brown sugar 3 Tbsp sesame oil 1 Tbsp ground ginger Toppings: Cilantro, minced Toasted sesame seed Directions: 1) Mise en place all ingredients. Prepare wok or cooking vessel. Chop produce. 2) Boil noodles in large pot, salted water. Drain noodles. Rinse in cold water to stop cooking process. 3) Mix sauce together in small bowl. 4) In wok, cook tofu in a small amount of oil until it is browned and crisp. Remove from pan and set aside. 5) Using same pan, saute onion in olive oil. When onion turns translucent, add in carrots and mushrooms and minced garlic. 6) Begin steaming broccoli on side. 7) Add sauce into sauteed vegetables. Stir in. Add in green onions and spinach. Steam in sauce. 8) Toss noodles in with sauce and veggies until all covered. Reduce sauce if needed, but noodles should soak up most of the sauce, so toss the noodles to ensure even spread of the sauce throughout. 9) Serve immediately, with your choice of spring roll, egg roll, pot stickers.

Ingredients: 1 cup cooked quinoa 1 small sweet potato, cubed and roasted ½ cup chickpeas (roasted or canned, rinsed) ½ avocado, sliced 1 cup steamed kale (or spinach) 2 Tbsp pumpkin seeds For the Tahini Lemon Dressing: 2 Tbsp tahini Juice of ½ lemon 1 tsp maple syrup (optional) 1 clove garlic, minced 2–3 Tbsp water (to thin) Salt + pepper to taste Directions: Arrange quinoa, sweet potatoes, chickpeas, avocado, and kale in a bowl. Whisk together dressing ingredients until smooth. Drizzle over the bowl, then sprinkle with pumpkin seeds. Mix before eating, or savor each layer individually.
